Rum and Raisin Cake


The wafting aroma filling the kitchen today came from the Rum and Raisin Cake, actually Cognac and Raisin Cake as I did not have rum. This cake was baked in the occasion of Mum’s birthday according to the Gregorian calendar. This is one of my more successful cakes yet. It rose nicely. It was soft and moist. I wonder what Mum’s comment would be if she could have a bite. Today marks the thirteenth week of Mum’s passing on.

    Learning from what you have written here, I think your mum has indeed lived a very successful life as a mother. I’m sure she will be very happy up there. Well, don’t worry, we will all definitely reunite again one day. May God bless you!
    By the way, I don’t mind to drop to try your bakery…ha..ha.. Even though you have nice pictures here but I can’t imagine how good will it taste until I try it, 😉

  2. If I were given a choice in my next reincarnation, I will certainly want Mum to be my mother again. She is the embodiment of what mothers should be.

    You do not have to imagine how my cakes taste. The taste of the pudding is in the eating, so they say. We can discuss how the Internet, and technology in general, have helped the disabled over a cup of tea and some cakes.

  3. That cake came out beautifully. Sometimes I find with nutty cakes I make that it crumbles easily when taken out of the pan, but yours looks great.

    You need to start a site for recipes, with accompanying pics and any tips to share from all baking experiences! 🙂

  4. Yes, it did rise beautifully but the raisins were a little sourish. A recipe site is certainly a good idea. Maybe I will name it Mum’s Kitchen.

    Hi!So you have the recipe for the Rum &Raisin Cake? I was thinking to try out the recipe because i love to eat the cake and its my favourite. But for the Rum&Raisin Cake there are many recipes that we can search from the recipes book or on the internet.
    Maybe i can try exchanging a few recipes with you so we can try out the cake and see whats the result.

  6. I met a precious mennonite lady years ago and her family had a rum n raisin cake that was soaked in rum, wrapped, and resoaked three times, took months to cure. Do you have such a recipe?
